RECIPE! [Breakfast Casserole] by Julie & Michelle Jansen

Julie made this by herself for my Community Bible Study luncheon today! She is so sweet.
And the casserole was SO YUMMY. 

Ingredients:
1 lb. sausage
6 eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
6 slices of bread
1 ½ cup shredded cheddar cheese
4 oz. sliced mushrooms optional (fresh is best but canned taste great)

  1. Preheat Oven to 350 degrees
  2. Brown the sausage – & then cool – & then drain it
  3. Beat eggs until they are frothy
  4. Mix milk, salt & the mustard together in a bowl
  5. Remove crusts from the bread
  6. Cut each piece of bread into 6 pieces
  7. Then, add eggs to the milk mixture and stir until soft
  8. Add cheese, sausage, mushrooms & bread to milk and egg mixture.
  9. Pour into 9x13 pan
  10. Bake 350 degrees for 45 minutes.

    Serves 10-12.

Recipe Hint: Refrigerate the entire pan overnight, instead of cooking it right away, in order to let the bread soak up the egg mixture and this is even more delicious!

Thanks to Mr. John Esposito!!  What a treat to fly formation with 2 Cubs in and around Tulsa.  We had a beautiful day and the company couldn't have been better!!  I thought I had the flying bug and now I have a whole new concept of the freedom that one of these machines really has to offer.

Moving to Tulsa was a tough decision.

We loved Enid, but Mike and I both felt like the Lord was calling us to Tulsa to be near our families and no matter what, we knew that He would bless that decision.  

We moved here in late June and purchased a house I had only seen on the internet. 

I know...I know what you're thinking. But stay with me, it gets better! (even Pictures to come!)

We knew it needed some work, but it was in a good school district, had an acre lot, four bedrooms and it was in our price range.  The kids were sad to leave their friends behind as well as the house.  

They were used to jumping hay bails, riding the four wheeler in the back yard, playing in the woods and running around at my uncles farm on the weekends.  

At first the kids were nervous about moving into town with neighbors. We went from living like country-folk to city dwellers.  Our Tulsa house,  built in 1978, was very outdated as it was. And there hadn't been many changes since.  

I have some fabulous before and after pictures to share with you in the coming blogs.

So, STAY TUNED, because...HOUZZ has got nothing on me!

When I work with customers, I want to make sure I don’t lose them with terms and coverage descriptions that are often intimidating (not to mention boring).  

Using the four R’s, I try to simplify insurance to them as: 

Required, Risk management, Retention, and (most important) Rest easy.

Let’s take a look at what’s “Required”. 

Most of us drive a vehicle and each state has laws that prescribe how liability is handled.  In Oklahoma, individual drivers must have minimum limits of $25,000 for injury liability for one person; $50,000 for all injuries; $25,000 for property damage in an accident. 

Commercial auto liability is often covered as a $1 million CSL (combined single limit).

And, additionally, if you own a home, you are generally required by your lender to have property coverage. 

Finally, bonds are required for many contractors in order to maintain licensing with the state. 

As you can see, requirements come from different sources. 

Certainly there is much more to knowing what other additional requirements you may have to cover your business or personal assets, and that’s where a good agent can deliver more clarification. 

I find this is usually a good place to start so people know why they need insurance in the first place.

RECIPE! [TACO SOUP] by The Jansen Family

Cinco de Mayo this month was fun and this is an ALL time favorite recipe in my house, as well as many homes in America!

Ingredients:
1 lb ground beef (we use ground deer)
¼ cup chopped onions
16 oz. can tomatoes
16 oz. can kidney beans (undrained)
17 oz. can whole corn
8 oz. can tomato sauce
1 pkg taco seasoning mix
  • In a large pot, brown ground beef and sauté onions
  • Drain well
  • Add tomatoes, kidney beans, corn, tomato sauce, and taco seasoning mix
  • Bring to a boil
  • Reduce and simmer, covered for 15 minutes
  • Stir occasionally 

Serve with sour cream & shredded cheese.  

RECIPE HINT: A pinch of cilantro adds a nice touch!

RECIPE!  (Layered Salad) - All time favorite for the summer!

2 cups of torn lettuce
1 cup cooked long grain rice
1 pkg(10 ounces) frozen peas, thawed
1/4 cup minced fresh parsley
2 large tomatoes, seeded and chopped
1 cup thinly sliced cucumber
1 small green pepper, chopped


DRESSING:
1 cup mayonnaise
1/2 cup sour cream
1/2 raisins
1/2 cup finely chopped onions
1/4 cup sweet pickle relish
2 tablespoons milk
1/2 teaspoon celery seed
1/2 teaspoon dill seed
1/2 teaspoon ground mustard
1/2 teaspoon garlic salt
Sweet red pepper rings and fresh parsley sprigs, optional
In a 3-qt. glass bowl, layer lettuce.  Combine rice, peas and parssley; spoon over lettuce.  Layer with tomatoes, cucumbers and peppers.  Combine the first 10 dressing ingredients; spoon over salad.  Garnish with red pepper and parsley if desired.  Cover and refrigerate for 8 hours or overnight.  Toss before serving.  Yield 10-12 servings. 

Recipe Tip: Add 3 cups of cubed chicken to the bottom layer to make it a hearty meal!

Today I taught 3rd graders.  

We read a news article on music bringing peace to Afghanistan children.  The article mentions that after the terrorist attack of 2001, the United States has been much more involved in Afghanistan, and the children there have many more freedoms and are able to play music that was once banned. 

I asked the class if they knew what the terrorist attack was in 2001. 


Only one boy knew the answer--the bombing of the twin towers.  

Another child recounted that it had happened in New York City.  

Aw, such innocent children who weren't even alive when this day happened. 


That's amazing!

It starts to make me realize that I have lived a long time and certainly have a lot of experience, insight and wisdom to pass down and share with those I’m around on a daily basis!

Kids are very impressionable and they have a lot to learn from us. Please, won't you look for opportunities to mentor a child? They need you and your own wisdom.

What is Cyber Insurance, exactly?

That's a catch-all term for policies that cover hacked computers, virus attacks, denial-of-service attacks, copyright infringement, Web content liability and other technology-related areas.

Be smart about what you insure. Although cyber insurance has been around for more than five years, there is still little empirical data available on incidents.

Companies don't want the public to know about security breaches, so many incidents go unreported.

Therefore, standardized insurance prices and policies are hard to come by.

What does Cyber Insurance cover?

Your general liability policy covers physical property. If your computer gets hit by lightning, you'll be reimbursed. But what if a virus destroys your data and causes serious downtime? Your liability policy may or may not cover the lost data or reimburse you for the time. Cyber Insurance clears the confusion and writes policies that deal directly with technology. Like most policies, you can tailor it to your needs.

What self-evaluation steps will you need to take?

Just like taking a physical for health benefits, your network security needs to be checked, as well. Don't expect to get a policy if you have no firewall or antivirus protection. Cyber Insurance policies require an assessment of current conditions. Large corporations are generally assessed by independent third-parties, usually at their own expense. A small business has it easier because it can conduct a self-assessment.

Hittin' the Lake

Couldn't wait until Memorial Day-the official start of summer.  Headed to Lake Tenkiller with the family and got some time behind the boat.  It's always great to get the boat out after winter and make sure everything is working after being winterized and no critters or weather have had negative effects on the boat.  Julie is doing 360s on kneeboard and boys are getting better and better at wakeboarding.  Lake level is WAY up which is nice after all the drought conditions.  Praise the Lord for a great start to the summer!!
