
1 3/4 c. all purpose flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp salt
2 ripe med. bananas
2 eggs
1/2 c vegetable oil
1 tsp vanilla
1/4 c. buttermilk
1 c. walnuts, chopped if desired
Ina large bowl stir together four, sugar, baking soda and salt. In another mixing bowl combine eggs, oil, buttermilk, vanilla and bananas; add to flour mixture stirring just until combined. fold in nuts. Pour into a greased 9 x 5 x 3 inch baking pan. Bake at 325 for 1 hour and 20 minutes.
RECIPE TIP: If you don't have buttermilk use milk and mix with 1 Tablespoon of white vinegar!
