School starts August 19th and we are anxiously awaiting the beginning of another school year. We have enjoyed a fun filled summer of laughter and fun but it's time for the kids and I to get down to business. (Mike never quit doing business.) The kids all got to see who their teachers are for next year and their schedules. It's amazing how technology has changed things since I was a kid. They see their schedule online, take a picture of it and then instagram or text it to all their friends to see who has classes with them. Saturday is the official schedule pick up day at Jenks but it's kind anticlimactic now. I am trying to establish good habits for the school year and set up some kind of routine and structure for the kids. Mike will be happy to see the kids in the mornings again as they will be up before 7am unlike the sleep till noon summer days. I have to gear up as well since I will be substitute teaching again this year for Jenks Southeast, East Intermediate and Middle School.

In another mixing bowl combine eggs, oil, buttermilk, vanilla and bananas; add to flour mixture stirring just until combined. fold in nuts. Pour into a greased 9 x 5 x 3 inch baking pan. Bake at 325 for 1 hour and 20 minutes. RECIPE TIP: If you don't have buttermilk use milk and mix with 1 Tablespoon of white vinegar! |
